Baked Feta




Who doesn't love the combination of bread and cheese? Or even better, bread and MELTED cheese? This is just the Mediterranean version of bread and cheese, and of course the Mediterranean diet is considered one of the healthiest of all (or that's what I keep telling myself).



This recipe was recommended to us by two of our closest friends here in Germany, Caitlyn and David. It's so easy and there is barely any preparation involved. A few chops here and there and it goes straight into the oven where it melts away alongside the baking bread. We almost always have leftovers from this dish, which means we get two dinners out of it instead of one (with another baguette of course or pita chips). So really, you can't go wrong with this recipe!






Ingredients:
  • 1 block feta
  • 1/2 pepper, chopped
  • a handful of plum tomatoes,
  • a handful of olives
  • 1 clove of Garlic, minced
  • 1 thinly sliced red onion or shallot 
  • olive oil 
  • black pepper 


Instructions:

    1. Preheat the oven to 180 °C (375 °F)  
    2. In a bowl mix together the tomato, pepper, onions, olives, garlic, olive oil and grinds of pepper.
    3. Put the feta in the middle of the baking dish and pile all the toppings on and around it.
    4. Place the baking dish in the oven for 15-20 minutes until the cheese has softened and the toppings are sizzling. 
    5. Eat and enjoy!
